Thai Salad

My dinner:

Raw vegan Thai salad

And a cooked version for Brent’s dinner:

Vegan Thai Seaweed Salad

Mulberry Pie

We have so many berries in the fridge right now… I have already made a raw pie out of them and I’ve been using them in my smoothies and salads but we still have tons left. So I made Brent a cooked (but still vegan) mulberry and juneberry (service berries) pie.

Vegan Berry Pie

The crumble topping is a mixture of oats, raw sugar, whole wheat flour, “butter”, tsp baking powder and a tsp baking soda.

Little rodent friends…

Well the forecast today said perfectly sunny when I checked it yesterday. I had a whole day planned of lounging in the garden and trying to soak up some rays. No such luck. We have been having some seriously stormy weather here today and evidently, I am not the only one who’s unhappy about it:

Squirrel

This is our little friend that I have wrote about before. His little tail is covering his head in a rather futile attempt to stay dry.  We tried to feed him before the storm came in but now his treats are in a soggy heap on our windowsill.

Brent’s dinner

While my dinner was entirely raw, Brent wanted something a bit different. Its a warm night though so he wanted something refreshing as well:

mozzarella tomato and basil salad

Tomatoes, home grown basil and “mozzarella”
