Soup and a salad

Salad and raw cream of tomato soup

Lunch was nothing special today… just soup (raw vegan cream of tomato) and a salad. The bread (which is not raw) is the last of our sourdough. We’ve been trying to eat all the leftovers to clear out our fridge for the move. It is definitely soup weather here; cold, wet and miserable!

We’re off to do an early Christmas with Brent’s family since we won’t be up here when it rolls around. This is the first time I’m seeing them since we announced the pregnancy. We’ve all been so busy that we just haven’t been able to get together.

The older I get… the younger I feel

My birthday is coming up in a few days (coincidentally the same day I will hit 100 posts on this blog!) I have some really fabulous desserts planned so stay tuned guys!

This was our lunch today:

Yum!

My typical breakfast these days

I have been on a major green smoothie kick as of late. I usually have them for breakfast and lunch. This was my breakfast this morning (along with a large juicy grapefruit):

Italian Dinner

Since last night was Thai themed, tonight, Brent decided he wanted an Italian dinner. He didn’t want anything heavy though (and frankly neither did I as it was a warm day here.)

Below are photos of my raw vegan Italian dinner and a cooked vegan version for Brent:

My dinner:

Raw vegan pesto over vegetables

And Brent’s cooked vegan version:

Vegan white pean and pesto pasta

I had both dishes ready in under 15 minutes. Raw food doesn’t have to be complicated or involved. The only additions to Brent’s cooked version are butter beans, broccoli and fettuccine. The pesto is the same for both dishes. Most of the time we eat as simply as you see above.
